Narrative
I have assigned Nicholas Crum to the family of Evan Crum and Sarah Hertzog, for the following reasons:
In 1800, there are 3 men named Crum in Cambria Township, Somerset County: Isaac, Evan, and John Crum. In 1820 the three are joined by their likely brother Ephraim Crum, who was in Maryland in 1800. On the 1800 census, both Evan and Ephraim had sons younger than ten who would be Nicholas' approximate age.
(In 1810 there is a Zachrias Crum in Cambria Township, who could be a brother to these men, but Zachrias had no sons older than ten, and he seems to have moved to Miami County, Ohio, by 1820.)
Isaac and John Crum left wills which do not mention Nicholas. In addition, Isaac had no sons on the 1800 census. John's will specifically mentions 'all' his sons, and none are named Nicholas.
This leaves Ephraim and Evan as Nicholas' possible father.
Nicholas is said to have been born on December 8, 1795, either in Maryland or Pennsylvania. (See his birth for sources.) Ephraim Crum and Hannah Creager were married January 11, 1796, in Frederick, Maryland. To my mind, this rules out Ephraim and Hannah as being Nicholas' parents.
Evan Crum and Sarah Hertzog were also married in Frederick, Maryland—on August 19, 1795, four months before the birth of Nicholas. The witnesses to their marriage were John Crum and Nicol Hertzog. There is a christening record for a Sarah Herzog at Saint Peter's Lutheran Church, Woodsboro, Frederick, Maryland, on 25 October 1772. She was born 14 September 1772. Her parents were Nicolaus and Elisabeth Herzog. (Source: Maryland Births and Christenings, familysearch.org.)
On the 1830 census of Summerhill Township, there is a Sally Crom listed on the line after Nicholas. The names were grouped by first letter, but not strictly alphabetically. The age of this Sally Crom, combined with the age of Evan's wife in 1800, matches that of Sarah Herzog, born 1772, in Frederick MD.
So Sarah (Hertzog) Crum could have named her first son after her father, Nicholas Hertzog.

Event Note
The Mt Union Cemetery transcription lists a birth date for Nicholas Crum, but without a source for the information. There is a photo of the tombstone. All but the death date is unreadable. His 1850 and 1860 censuses point to a birth year of 1795. In 1850 his information said he was born in Pennsylvania. In 1860 it said Maryland. The death of his youngest son Nicholas says that Nicholas (Sr) was born in Pennsylvania. The 1880 census information for his children Mary Ann, Susan, and Moses say he was born in Pa. The 1900 census for Moses also says that Nicholas was born in Pa. |
